Dr. Susan Baker is currently a Professor and Extension Specialist in the Department of Food Science and Human Nutrition at Colorado State University. She also serves as the Expanded Food and Nutrition Education Program Coordinator in Colorado.
The training and development of paraprofessional nutrition educators is one of Susan’s passions. She coauthored a book entitled Maximizing Paraprofessional Potential. More recently, Dr. Baker led a comprehensive revision of the healthy eating and active living curriculum Eating Smart ● Being Active, which is designed for use by paraprofessionals. The curriculum is currently being used by more than 40 US states and US territories.
Dr. Baker’s research interests include nutrition education methods and the evaluation of nutrition education interventions with low-income women of childbearing age. Learn more about Food Science and Human Nutrition research.

Brigid is currently a Supervisor and Research Associate III with the Expanded Food and Nutrition Education Program at CSU Extension. Brigid is responsible for paraprofessional supervision, leads youth curricula development, revision and training processes, contributes to creation of EFNEP program materials, and co-leads adult curricula development, maintenance and training. As Research Associate, she supports the EFNEP faculty member on grant writing, data collection/analysis, reporting, and manuscript writing and editing. As a Project Manager for EFNEP curriculum and research projects, she trains and supervises data collectors and assists FSHN and MPH students during their EFNEP experience/internships. Brigid also represents CSU Extension and EFNEP on various county, state, and national committees.
Brigid has worked for Colorado State University since 2003. Prior to her appointment to the EFNEP leadership team within the Department of Food Science and Human Nutrition in 2015, she was an Extension Agent in Jefferson County, Colorado. Brigid spent 8 years teaching low-income families nutrition education via the Supplemental Nutrition Assistance Program-Education (SNAP-Ed) program before serving as the SNAP-Ed and EFNEP Nutrition Program Supervisor for the Front Range Region from 2011-2015.
