From the Department Head Welcome to Food Science and Human Nutrition at CSU!

Our department mission is to illuminate the role of food and nutrition in the health of society through education, research, outreach and service. We provide undergraduate and graduate students with enriching, inclusive, and interactive academic experiences that prepare them for numerous careers in health, food science, and hospitality. Our faculty members are leaders in their fields and both undergraduate and graduate students have opportunities to gain valuable hands-on research and clinical experience that can set them apart when they enter the job field. With these resources, our goal is to help our students uncover their passion and foster their potential to become leaders in their fields and their communities. Faculty and staff make significant contributions to the field by presenting and publishing their scholarly research in both applied and basic nutrition science journals. The department is currently involved in multi-year grant and contract research as well as education programs totaling more than $6 million.

To celebrate our rich history during our 150th Anniversary we will be looking at the Food Science and Human Nutrition Department’s early beginnings and through the years. Our image is of an early lab where a woman is weighing a rat in what was then known as the Department of Home Economics.
