In Food Science and Human Nutrition, we examine how food, nutrition, and physical activity affect human health, with an emphasis on chronic disease prevention and management. Our work integrates food safety, food structure and function, fermentation science, gut and cardiovascular health, and metabolic fitness, while supporting hands-on education, community-engaged research, and industry collaboration to promote health equity and reduce food insecurity.
