These videos were specially prepared by Kendall Reagan Nutrition Center staff and practicum students in collaboration with Colorado State University’s Campus Rec Center and Associated Students at Colorado State University (ASCSU) as a virtual engagement opportunity for CSU students. Enjoy!

Blueberry Baked Oatmeal Recipe (VGT)
This recipe can be made gluten free by using certified gluten-free oats. To make it vegan dairy free, replace the egg with 1 tablespoon of chia seeds or ground flaxseeds, opt for agave or maple syrup, and use your favorite nondairy milk.
Personal Pizzas Recipe (VGT)
To make this recipe dairy free vegan, omit mozzarella cheese or substitute with a nondairy cheese. To make it gluten free, substitute the whole grain English muffin with a gluten free english muffin.
Quinoa Stuffed Green Peppers Recipe (VGT, GF)
To make this recipe dairy free vegan, omit mozzarella cheese or substitute with a nondairy cheese.
Vegetarian Chili Recipe (VGT, V, DF)
To make this recipe gluten free, use a gluten free beer or substitute with an equal amount of gluten-free broth. Add your favorite chili toppings such as green onions, cheese (dairy or nondairy), and sour cream (dairy or nondairy).
Cherry Banana Ice Cream Recipe (VGT, V, GF, DF)
Wheat Pasta with Veggie Alfredo and Turkey Meatballs Recipe
To make this recipe vegetarian, make the meatballs with your favorite vegan ground meat alternative and to make it vegan, opt for nondairy parmesan and use a vegan alfredo sauce. To make it gluten free, substitute whole grain pasta and bread crumbs with certified gluten-free alternatives.
Vegetarian Tempeh Tacos Recipe (VGT, V, DF)
To make this recipe gluten free, use tamari instead of soy sauce and make sure to use corn tortillas or gluten-free tortillas. Use your favorite toppings: salsa, lettuce, tomatoes, guacamole, or cabbage. You can also top with dairy or nondairy sour cream and cheese.
No-Bake Coconut Flaxseed Energy Bites Recipe (VGT)
This recipe can be made gluten free by using certified gluten-free oats. To make it vegan dairy free, substitute the honey with agave or maple syrup and use dairy free chocolate chips or omit completely.
Chewy No-Bake Cinnamon Cranberry Granola Bars Recipe (VGT, DF)
To make this recipe vegan, substitute honey with agave or maple syrup. To make it gluten free, use certified gluten-free oats.
Baked Chicken Parmesan Recipe
To make this recipe gluten free, use certified gluten-free bread crumbs. To make it vegetarian, replace the chicken with eggplant to transform it into another Italian classic, Eggplant Parmesan. For a dairy free version, use your favorite nondairy cheese to replace the mozzarella and Parmesan.
Golden Fried Rice with Shrimp Recipe (DF)
To make this recipe gluten free, use tamari instead of soy or oyster sauce. To make it vegetarian, replace the shrimp with any plant-based protein (tofu, tempeh, etc.) and use soy sauce instead of oyster sauce.
