We challenge you to understand the biology, biochemistry, and microbiology of fermentation from a food and beverage perspective.
Our program was developed with food and beverage fermentation industry leaders. You will get coursework in applied food fermentation, brewing, sensory analysis, and operations management. Additionally, we regularly connect you with fermentation science professionals who are experts in their fields.
Throughout the program, you will take courses with lab sections in our modern facilities including our on-campus Ramskeller Brewery, and several brew kitchens and quality testing laboratories. In these spaces, you will have ample opportunities to utilize equipment and instrumentation common to the industry.
Internships
We encourage you complete an internship during your studies. Our program has strong ties to the food and fermentation industry, and many internship positions are available throughout the year. Through an internship you are able to experience different areas within the fermentation industry, helping you discover your future career goals.
Research
You will complete a capstone research project mentored by an industry partner. You can also sign up for Independent Study credits and work with program faculty and staff on research projects. You will learn how to set up a well-designed research project, learn specific lab methods and techniques, and interact with industry and faculty members.

As a Fermentation Science and Technology major, you can join a club to promote nutrition and health in the CSU community, network with industry professionals, and build leadership experience in a club officer role.
Academic Advising and Support
At least once per semester, you will meet with your academic success coordinator, who can help you answer questions about which majors and careers might be right for you, what courses and extracurricular activities will help you prepare, and how to stay on track for graduation.
With a degree in Fermentation Science and Technology, you will be able to find careers in the food industry either specializing in food fermentation, product development, brewing, and production management. Our FSHN Job board will help you in your search!
